Baijiu Cocktails
Baijiu’s strange and exotic Eastern aroma, with its myriad of unusual tastes, make it a must have addition to any shakers and stirrers’ cocktail bar, that is if they are wanting to add a bit of excitement and mystique to their creations.
So, I have decided to go back and give some classic cocktails a baijiu twist. Aimed at the more experienced and sophisticated cocktail adherents.
To make these classic cocktails I have used an old fashioned “jigger” the jigger is a measuring cup which holds 1-1/2 fluid ounces, but be careful, as some of the modern jiggers differ in size.
You maybe wondering why so much crushed ice is used in cocktails. The reason is to chill ingredients in the shaker, then in most cases the ice is strained off as you pour it into cocktail glass, so as not to dilute the drink.
In the following recipes, I will use the term “measurement” which will refer to the jigger. So, remember a measurement is 1-1/2 fluid ounce, Happy shaking and stirring.

Now let us explore some classic gin cocktails and drinks with a baijiu addition.
Baijiu and Gin Fizz – Baijiu Cocktail
- 4 ice cubes cracked
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of gin
- 2 tablespoons of lemon juice
- 1 teaspoon of sugar syrup
- 1/2 an egg white
- 1 teaspoon of crème de menthe
- Soda water
Put all of the ingredients except the soda into a cocktail shaker, shake to mix. Strain into a tall glass and garnish with a sprig of mint and a slice of lemon, top with soda.
Baijiu and Gin Sling – Baijiu Cocktail
- Juice of 1/2 a lemon
- 2 teaspoons of powdered sugar
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of gin
- Dash of Angostura bitters
- 2-3 ice cubes
- Mineral water
Mix all the ingredients into a tumbler, add ice cubes and top with mineral water.
Horses Neck – Baijiu Cocktail
- Long spiral of lemon peel
- 3 cracked ice cubes
- 3/4 measure of V.I.P Jiu 8 Baijiu
- 3/4 measure of gin
- Dry ginger ale
Hang the lemon peel down the side of a tall glass. Add ice, pour in the spirits and top with dry ginger ale.
White Horse – Baijiu Cocktail
- 4 ice cubes cracked
- 1 egg white
- 2 teaspoons of sugar syrup
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1/2 measure of lemon juice
- 1/2 measure of crème de menthe
- Soda water
Put the ingredients, except soda water into cocktail shaker, shake well, then strain into a tall glass top with soda water, serve with a straw.
Eaton Blazer – Baijiu Cocktail
- Lightly beaten egg white
- Caster sugar
- Cracked ice
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1 measure of kirsch
- 1/4 teaspoon of sugar syrup
- Soda water
- Two cherries with stems joined
Dip the rim of a tumbler in egg white, then into caster sugar, to give the tumbler rim a frosted look, add ice and the rest of the ingredients except soda, stir, top up with soda water and add cherries to garnish.
Singapore Sling – Baijiu Cocktail
- 2 ice cracked cubes
- 1/2 measure of cherry brandy
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1/4 measure of Cointreau
- Juice half a lemon
- soda water
Put all the ingredients except soda water into tall glass, stir, top with soda water and garnish with cocktail cherries and a slice of orange, serve with a straw.
Dry Martini – Baijiu Cocktail
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 2 measures of dry vermouth
Put some cracked ice into a glass and add spirits and stir. Garnish with a strip of lemon peel and an olive.
Sweet Martini – Baijiu Cocktail
- Two drops of orange bitters
- 1 measure of V.I.P Jiu 8 Baijiu
- 1 measure of gin
- 1 measure of sweet vermouth
Put orange bitters into a glass and swirl around to coat the glass, add the rest of the ingredients and garnish with a cocktail cherry.
Paradise – Baijiu Cocktail
- 2-3 cracked ice cubes
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1/2 measure of apricot brandy
- 1/2 measure of unsweetened orange juice
- Dash of lemon juice
Put all the ingredients into a cocktail shaker, shake and strain into a cocktail glass and garnish with an orange slice and a lemon slice.
Red Kiss – Baijiu Cocktail
- 3 ice cubes, cracked
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1 measure of dry vermouth
- 1/2 measure of cherry brandy
Put all the ingredients into a mixing glass and stir well. Strain into a cocktail glass, garnish with a cocktail cherry and a spiral of lemon peel.
Woodstock – Baijiu Cocktail
- 3 ice cubes, crushed
- 1/2 measure of gin
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1 measure of dry vermouth
- 1/4 measure of Cointreau
- 1 measure of unsweetened orange
Put all the ingredients into a cocktail shaker, shake then strain into a cocktail glass and garnish with a spiral of orange peel and a slice of orange.
Pink Lady – Baijiu Cocktail
- Beaten egg white
- Castor sugar
- 2-3 ice cubes, cracked
- 1/2 egg white
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1 teaspoon of grenadine
- 1 teaspoon of lemon juice
Dip the rim of a small goblet into egg white then castor sugar, put the ice and the rest of the ingredients into a shaker, shake to mix and strain into a glass.
Stormy Weather – Baijiu Cocktail
- 3 ice cubes cracked
- 3/4 measure of V.I.P Jiu 8 Baijiu
- 3/4 measure of gin
- 1/2 measure of Mandarine Napoleon liqueur
- 1/4 measure of dry vermouth
- 1/4 measure of sweet vermouth
Put all the ingredients into a shaker, shake and strain into a cocktail glass and garnish with a twist of lemon.
Bijou Baijiu
- 3 ice cubes cracked
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1/2 measure of green chartreuse
- 1/2 measure of sweet vermouth
- Dash of orange bitters
Put all the ingredients into a mixing glass and stir well, strain into a cocktail glass and garnish with an olive and a squeeze of lemon zest.
Stop Press – Baijiu Cocktail
- 3 ice cubes cracked
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1 measure of kummel
- 1 teaspoon of lemon juice
Put all the ingredients into a small tumbler, stir and garnish with a lemon peel.
Orange Blossom – Baijiu Cocktail
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1 measure of Bianco vermouth
- 1 measure of unsweetened orange juice
Put all the ingredients into a shaker, shake to mix, place two ice cubes into tall glass, strain the cocktail over the ice and garnish with a slice of orange.
Collinson – Baijiu Cocktail
- 3 ice cubes cracked
- Dash of orange bitters
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1/2 measure of dry vermouth
- 1/4 measure of kirsch
Put all the ingredients into a mixing glass, stir, strain into a cocktail glass, squeeze lemon zest over the drink and garnish with a cocktail cherry and a twist of lemon.
Milano – Baijiu Cocktail
- 3 ice cubes cracked
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1 measure of Galliano
- 1 measure of lemon juice
Put all the ingredients into a shaker, shake and strain into a cocktail glass and garnish with a cocktail cherry.
Angels Face – Baijiu Cocktail
- 3 ice cubes crushed
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1/2 measure of apricot brandy
- 1/2 measure of Calvados
Put all the ingredients into a shaker, shake and strain into a cocktail glass.
White Lady – Baijiu Cocktail
- 1 measure of V.I.P Jiu 8 Baijiu
- 1 measure of gin
- 1 measure of Cointreau
- 1/2 teaspoon egg white
Put all the ingredients into a shaker, shake and strain into a cocktail glass.
Bronx – Baijiu Cocktail
- 3 ice cubes cracked
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1 measure of sweet vermouth
- 1 measure of dry vermouth
- 2 measures of fresh orange juice
Put all the ingredients into a shaker, shake and strain into a small tumbler.
John Collins – Baijiu Cocktail
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of gin
- 1 teaspoon of caster sugar
- 1 tablespoon of lemon juice
- 2 ice cubes cracked
Put the sugar into a tumbler and lthe emon juice, stir until sugar is dissolved, add spirits, top with soda water and garnish with a lemon slice.
Now let us explore some classic vodka cocktails and drinks with a baijiu addition
Bullshot – Baijiu Cocktail
- 2-3 ice cubes
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 2-1/2 measures of canned consommé
- Dash of tabasco
- 1 teaspoon of Worcestershire sauce
- 1 tablespoon of lemon juice
Put all the ingredients into a mixing jug, stir and strain into a cocktail glass.
White Russian – Baijiu Cocktail
- 6 ice cubes cracked
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 1 measure of Tia Maria
- 1 measure of milk
Put half of the ice into a shaker, add rest of ingredients and shake. Put the rest of the ice into a tall narrow glass, strain mixture over ice and garnish with chocolate sprinkles, serve with a straw.
Norman Conqueror – Baijiu Cocktail
- 4 ice cubes cracked
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 1/2 a measure of Calvados
- 1/2 a measure of unsweetened apple juice
- Dash of Angostura bitters
Put half of the ice into a shaker, add the rest of the ingredients, shake, put rest of the ice into a tall glass and strain mixture over ice, garnish with 1 slice of orange and 1 slice of lemon and a sprig of mint.
Orange Mist – Baijiu Cocktail
- 4 ice cubes cracked
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 1/2 a measure of Irish mist
- 2 measures of unsweetened orange juice
Put half of the ice into a shaker, add rest of the ingredients and shake. Put the rest of the ice into tumbler, strain mixture over ice, add a splash of soda water and garnish with a slice of orange.
Perfect Love – Baijiu Cocktail
- 3 ice cubes cracked
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 1/2 a measure of Parfait Amour
- 1/4 measure of maraschino
Put all the ingredients into a small glass, stir and garnish with a twist of lemon peel, serve with a short straw.
Harvey Wallbanger – Baijiu Cocktail
- 2 ice cubes cracked
- 2 measures of fresh orange juice
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 2 teaspoons of Galliano
Put the ice into a tumbler, add the rest of ingredients, stir and garnish with an orange wedge, chunk of pineapple and a cherry on a cocktail stick.
Le Mans – Baijiu Cocktail
- 3 ice cubes cracked
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 1 measure of Cointreau
Put all the ingredients into a tall glass, stir, top up with soda water and garnish with a slice of lemon.
Behind the Wall – Baijiu Cocktail
- 3 ice cubes crushed
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 2/3 of a measure of Mandarine Napoleon liqueur
- 2/3 of a measure of Galliano
- 1 measure of unsweetened orange juice
Put all the ingredients into a shaker, shake, strain into a tall glass, top with ginger ale and garnish with a slice of orange, serve with a straw.
Salty dog – Baijiu Cocktail
- 3 ice cubes
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
Put all the ingredients into a tall glass, stir, top up with unsweetened grapefruit juice and add a pinch of salt.
Godmother – Baijiu Cocktail
- 2 ice cubes
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 1 measure of Amaretto di Saronno
Put the ice cubes in to a small goblet, add rest of the ingredients and stir.
Highland Fling – Baijiu Cocktail
- 4 ice cubes cracked
- Dash of Angostura bitters
- 3/4 of a measure of V.I.P Jiu 8 Baijiu
- 3/4 of a measure of vodka
- 1/2 a measure of Drambuie
Put all the ingredients into a mixing jug, stir, strain into a cocktail glass and garnish with a cherry.
Autumn – Baijiu Cocktail
- 4 ice cubes cracked
- 3/4 of a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 3/4 of a measure of Southern Comfort
- 2 teaspoons of lemon juice
Put half of the ice into a shaker, add the rest of the ingredients and shake. Put rest of the ice into a cocktail glass, strain the mixture over the ice and garnish with a twist of lemon peel.
Black Russian – Baijiu Cocktail
- 2-3 ice cubes
- 1 measure of V.I.P Jiu 8 Baijiu
- 1 measure of vodka
- 1 measure of coffee liqueur
Put the ice into a tumbler, pour in the spirits and stir.
Screwdriver – Baijiu Cocktail
- 2-3 ice cubes
- 1/2 measure of V.I.P Jiu 8 Baijiu
- 1/2 measure of vodka
- Juice of 1 orange
Put all the ingredients into a tumbler and stir.
Hair Raiser – Baijiu Cocktail
- 1-2 ice cubes
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 1 measure of sweet vermouth
- 1 measure of tonic water
Put all the ingredients into a tall narrow glass, stir and garnish with a spiral of lemon peel.
Russian Secret – Baijiu Cocktail
- 4 ice cubes cracked
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of vodka
- 1/2 a measure of Benedictine
- 2 measures of unsweetened grapefruit juice
Put half of the ice into a cocktail shaker, add the rest of the ingredients, shake, put the rest of the ice into a small goblet, strain the mixture over and drink with a short straw.
Moscow Mule – Baijiu Cocktail
- 2-3 ice cubes
- Juice of half a lime
- 3/4 measure of V.I.P Jiu 8 Baijiu
- 3/4 measure of vodka
Put the ice into a tall glass, add the ingredients, stir, top up with ginger beer and garnish with a slice of lime.
Time now for a few whiskey classics, with a baijiu kick
B and W Mac – Baijiu Cocktail
- 2-3 ice cubes
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of whiskey
- 1 measure of ginger wine
Put all the ingredients into a small tumbler and stir.
Ritz Old Fashioned – Baijiu Cocktail
- Lightly beaten egg white
- Caster sugar
- 3 ice cubes crushed
- 3/4 measure of V.I.P Jiu 8 Baijiu
- 3/4 measure of whiskey
- 1/2 a measure of Grand Marnier
- A dash of lemon juice
- A dash of Angostura bitters
Dip the rim of an old-fashioned glass in to a beaten egg, then into caster sugar. Put the ingredients into a shaker, shake, strain into a glass and garnish with an orange and a lemon slice and a cherry.
Club – Baijiu Cocktail
- 3 ice cubes cracked
- 2 dashes of angostura bitters
- Dash of grenadine
- 1/2 a measure of V.I.P Jiu 8 Baijiu
- 1/2 a measure of whiskey
Put all the ingredients into a mixing jug, stir, strain into a cocktail glass and garnish with a lemon peel and a cherry.
